Los boyacenses y santanderianos adoptaron esta receta con entusiasmo. Las tripas naturales se rellenan con una mezcla de carne molida, tocino y hierbas aromáticas. El sabor picante de las génovas se realza con un toque de limón al servirlas.
Mezcla los Ingredientes:
Combina carne de Cordero molida,sal de nitro, hierbas como poleo, yerbabuena y perejil, y especias al gusto.Forma las Bolas: Separa la mezcla en bolas del tamaño de un limón y átalas con cuidado para evitar que se revienten.
Cocción y Ahumado:
Cocina las génovas en agua con leche a fuego medio durante 30 minutos. Luego, déjalas enfriar, escúrrelas y sécalas al sol. Ahúmalas ligeramente sobre un fogón o en un lugar fresco.
Las génovas son ideales para acompañar con pan fresco y una refrescante bebida.
